Cold brew

Coffee steeped in cold water for half a day: smooth, low in acidity, great over ice.

Where it comes from

Japan's slow-drip "Kyoto-style" cold coffee is often said to go back centuries, though that history is hard to pin down.

In the US, chemical engineer Todd Simpson patented the Toddy cold brew system in 1964.

How to make it at home

  1. Combine the coffee and water and stir so all the grounds are wet.
  2. Cover and steep at room temperature or in the fridge.
  3. Strain through a fine mesh, then a paper or cloth filter.
  4. Dilute and serve over ice. Keep the concentrate in the fridge.

Coffees to try with it

Often recommended with chocolatey, nutty coffees like Brazil or Colombia.
